Prepare dinner for about a minute to mix.Carrot and Pepper Soupa pair of tablespoons olive oilone-a couple of red bell peppers choppeda pair of cups diced yellow or white onion1 pound carrots6 cups water or vegetable stockthree tablespoons chopped parsley3 tablespoons riceWarmth the oil in a soup pot; include in the peppers, onion, carrots, rice, and salt to taste. Cook above medium warmth with a cover for about 10 minutes. Include the parsley and water or stock and bring the mixture to a boil.
