A Healthy Fudge Recipe to Satisfy Your Sweet Tooth

Because I am a health conscious person, I like to find ways to prepare delicious foods that most people would not believe are actually healthy. I have a sweet tooth and once I get started it’s hard to stop. So…for those of you who also happen to have a sweet tooth, I am going to share a quick and healthy recipe that will satisfy that tooth.

You will see many desserts that are labeled as being “healthy”. These foods are claimed to be reduced in fat and because of that there is also an increased sugar content or artificial sweetener…neither of which are really “healthy”.

Below is a great chocolate-peanut-butter fudge recipe that real simple to make. So simple it takes only 5 minutes! The great thing is that there is no added sugars, no artificial sweeteners, and all healthy fat sources. You’ll see why below.

A healthy chocolate-peanut-butter fudge recipe (peanut butter can be omitted if you prefer plain chocolate):

Extra dark chocolate bar (3-4 oz bar works well — look for at least 70% cocoa content, between 70-85% — this minimizes the sugar content) 4 or 5 Tbsp of your favorite organic nut butter (almond butter, cashew butter, peanut butter all work well) 2/3 to 3/4 cup of organic coconut milk (great source of healthy saturated fats from medium chain triglycerides – MCTs) 2 tbsp rice bran (additional healthy fiber source) 2 tbsp oat bran (more healthy fiber including soluble fiber) 1/2 cup raw pecans, almonds, or walnuts (yes, more healthy fats, antioxidants, and tons of vitamins/minerals) 1/2 cup dried cranberries or raisins (optional based on your tastes) 1 tsp vanilla extract a little stevia to lightly sweeten (stevia is a natural non-caloric sweetener as opposed to harmful artificial sweeteners)

In a medium sauce pan and on the lowest heat setting possible, start by mixing the coconut milk, nut butter, and the chocolate bar. Stir the mixture continuously stir as everything melts together. Once melted you can add all the other ingredients and mix them together well.

After everything is all mixed together, take a baking pan and put some wax paper in the bottom of it. Spread the mixture over the wax paper and place into the fridge to solidify. Depending on how much or how thick you want your fudge will determine what kind of baking pan you will use. If you want something thin (cookie thin), then use a cookie sheet. If you want more of a brownie thickness, use a cake pan of any size.

Now you have some of the healthiest chocolate fudge ever known to man!But just because this is a healthy snack doesn’t mean you can go all out and eat a bunch. Keep your serving portions small because even though this is a healthy snack, it is also a calorie-dense snack. Compared to a typical fudge recipe there is less sugar and calories in this fudge and there is more nutrition found in it than in the typical fudge.
